Susie B’s Meatballs and Shaved Cabbage
| Serves: 4
- 500g Peppercorn Extra Lean Meatballs
- 2 tbsp olive oil
- 2 lemons, juiced
- 1 head savoy cabbage
- 100g Parmesan, grated
- 2 cups rocket, washed
- 2 carrots, grated
1 – Heat a tbsp of olive oil in a pan over a medium heat and cook the meatballs for 1-2 minutes each side.
2 – For the cabbage, combine the olive oil, lemon juice and a pinch of salt and pepper to create the dressing.
3 – Shred the cabbage leaves finely with a grater or knife.
4 – Add the vinagrette and toss until leaves are well coated.
4 – Add the parmesan, rocket and grated carrot to the mixture and combine. Serve with the meatballs on top.
