Chicken Sausage Stew

ingredients
- 450g Peppercorn Extra Lean Chicken Sausages
- 2 tsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 1 red capsicum, chopped
- 1 green capsicum, chopped
- 2 cups of button mushrooms, halved
- 800g can tomatoes
- 1 sprig of thyme
- 1 sprig of rosemary
- ½ tsp paprika
- 1 head of broccoli, steamed to serve
PREPARATION
1 – Heat oil in a deep saucepan on medium heat and brown chicken sausages for about 10-12 minutes.
2 – Remove from pan and set aside.
3 – Add onion and garlic to the pan and cook for 1 minute until softened.
4 – Add mushrooms and cook for 4 minutes.
5 – Add capsicum and cook for another 4 minutes.
6 – Add tomatoes, sausages, herbs, spices, salt and pepper.
7 – Reduce heat to low and cover with a lid. Simmer for 20-30 minutes.
8 – Serve with steamed broccoli.
