Susie B’s Meatball Pizza

25 mins | Serves 4

ingredients
  • 500g Peppercorn Extra Lean Meatballs
  • 2 large pita breads for pizza bases
  • 3 tbsp tomato pizza paste
  • ½ butternut pumpkin, cubed
  • 1 red onion, sliced
  • ¼ cup pine nuts
PREPARATION

1 – Preheat the oven to 180°C.

2 – Steam the pumpkin in the microwave for 4 minutes, then lightly coat in oil and bake for 10 minutes.

3 – Spread your pizza base with tomato paste.

4 – Chop meatballs in half and place over the pizza, round side facing up.

5 – Place the potato and onion on the pizza, sprinkle the cheese over the top, and bake in the oven until the cheese is golden and the edges of your base are crispy.

6 – Remove from the oven, sprinkle the rocket and pine nuts over the pizza and return to the oven for a further 2 minutes.

7 – Cut and serve!
